Grilled Watermelon Salad
This grilled watermelon salad is an easy fruit salad recipe, and one of the more unique watermelon recipes you can make. Enjoy!
What you need:
- 6 slices seedless watermelon
- 1 tsp kosher salt
- 6 cups romaine or bibb lettuce (cut into bite-sized pieces)
- 1 cup fresh mint, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup freshly squeezed lemon juice
What you do:
Prepare grill or heat a cast iron grill pan over medium heat.
Sprinkle salt over watermelon slices.
Place watermelon on grill in a single layer (you may have to do this in batches).
Cook 2 minutes, then flip and cook another 2 minutes.
Remove and place on a cutting board.
Allow watermelon to cool for 5 minutes.
Cut into bite-sized pieces and set aside.
Place the lettuce in the bottom of a large salad bowl.
Top with watermelon pieces, mint, and feta.
Pour the lemon juice over the salad and lightly toss.
Serve immediately.
Makes 4 to 6 servings.
