You know summer is here when it's time to start looking for strawberry recipes! Don't forget about strawberry jam, always a good way to use up an abundance of berries. You can find a recipe for that here. It's an easy one, with only 3 ingredients!
Strawberry Mice
I found this wonderful recipe at familyfun.com and made them for a backyard BBQ as a dessert for the kids.
The adults ended up enjoying them even more than the smaller guests! I don’t recommend making them too far ahead, overnight in the fridge made the tails go slimy.
I also used mini chocolate chips for the eyes instead of icing. They are very cute!
What you need:
Strawberries
Chocolate chips
Almond slivers
Licorice lace
Icing (optional)
Cheese (optional)
What you do:
For each mouse, slice a small section from the side of a strawberry so it sits flat. Press a mini chocolate chip into the tip for a nose, using a small dab of icing to secure it in place, if needed. Add icing eyes and stick 2 almond slivers into the top of the berry for ears. For a tail, use a toothpick to carve a small hole in the back of the berry and push the end of a piece of licorice lace into the hole. Serve these berry cute treats with small triangles of cheese.
Ladybugs on a Stick
This is another cute strawberry recipe children will enjoy. I found these on batterupkids.com. Get the kids to help you make them, just be careful with the skewers!
What you need:
Red grapes
Strawberries
Mini chocolate chips
Honeydew melon
What you do:
For each ladybug, push half of a red grape onto a trimmed wooden skewer for the head.
Next, push on a hulled strawberry body and score the back to create wings.
For spots, use a toothpick to gently press mini chocolate chips, tips down, into the fruit. Arrange the skewers on a honeydew melon half.
Strawberry Pie
Start with the best berries you can find for the most delicious results.
What you need:
6 cups strawberries
1 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
2 tablespoons strained fresh lemon juice
2 tablespoons unsalted butter, cut into small pieces
What you do:
Bake and cool a 9-inch pie crust.
Rinse, dry, and hull the strawberries; cut any very large ones in half. Measure 4 cups of berries and set aside. Puree the remaining 2 cups berries in a blender of food processor.
In a medium saucepan whisk together sugar, cornstarch and salt. Whisk in 1/2 cup of water.
Stir in the pureed berries along with lemon juice and butter.
Bring the mixture to a simmer over medium-high heat, stirring constantly, and cook for 1 minute.
Pour half of the reserved berries into the crust and spoon half of the hot berry mixture over them. Gently shake the pie pan to coat the berries evenly. Cover with the remaining berries, spoon the remaining hot berry mixture over them, and gently shake the pan to coat the top layer of berries.
Refrigerate the pie for at least 4 hours to set. This pie is best served the day it is made and whipped cream goes really well with it!
