Strawberry Muffins
These strawberry muffins make good use of the sweet, tasty fruit.

What you need:- 1/2 cup butter, softened
- 2 large eggs
- 1 cup milk
- 4 tsp baking powder
- 1/8 tsp salt
- 1 cup sugar
- 3 cups flour
- 1/2 tsp strawberry extract
- 1 pint strawberries, chopped
What you do: Preheat oven to 350 degrees F. Spray pans with vegetable spray or use papers. Melt butter and set aside. In a large bowl whisk eggs, milk, strawberry extract, baking powder, salt, and sugar. Mix well. Add butter and whisk until well blended. Gently fold in chopped strawberries. Fold in flour using a spatula or wooden spoon until moist. Fill muffin cups 3/4 full. Sprinkle a little sugar on top of each muffin. Bake at 350 degrees about 25 minutes or until light brown. After 5 minutes, cool on a wire rack.
