These raspberry bars are one of the tasty raspberry desserts and raspberry recipes you can make at home.

1/2 cup butter, soft 1/2 cup shortening 1 cup sugar |
2 eggs 1 lime 1 cup flour, self rising 1 1/2 cups raspberries |
Preheat oven to 350 degrees F.
Grease 9" baking pan.
Mix butter, shortening and sugar until fluffy with mixer.
Add one egg and beat, then add other egg and beat well.
Zest lime and add to mixture. Then squeeze lime and add juice to mixture.
Add flour and mix well.
Stir in raspberries.
Spread into pan.
Bake 35 to 40 minutes until toothpick inserted in center comes out clean.
Cool in pan.

For the Cake 1 cup flour 3/4 cup sugar 1/2 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1/3 cup buttermilk 1 egg - lightly beaten 1/2 teaspoon vanilla extract 1/3 cup butter - melted and cooled 1 1/4 cups fresh black (or red) raspberries |
Topping
In a bowl, combine brown sugar, flour, and butter.
Using your hands, mix thoroughly, then add chocolate.
Mix well and set aside.
Cake
Preheat oven to 375.
Sift flour, sugar, baking powder, baking soda, and salt together into a medium bowl.
In a separate bowl, whisk together buttermilk, egg, vanilla, and melted butter.
Add buttermilk mixture to flour mixture and mix.
Pour batter into a lightly greased 8 inch round spring form cake pan.
Sprinkle raspberries over cake, then cover with topping.
Bake until well browned, 40 - 45 minutes.
Serve warm.
