Before freezing the pineapple, drain and reserve the juice. Once pineapple is frozen, you are ready to make your smoothie! Put everything but the mint leaves in a blender and blend until smooth. Pour and garnish with mint, if you are feeling fancy.
Pina Colada Smoothie
5 tbsp coconut milk
2 1/2 cups pineapple juice
1/2 cup vanilla ice cream
1/2 frozen banana (break into chunks & freeze)
1 1/2 cups frozen pineapple chunks
Put coconut milk and pineapple juice into a blender. Add in ice cream, frozen banana and the pineapple chunks. Blend until smooth.
Tropical Paradise Smoothie
1 1/2 cups pineapple-orange juice
1 cup sliced banana (1 medium banana)
1 cup ice cubes
3/4 cup diced pineapple
1/2 cup vanilla frozen yogurt
1 tablespoon flaked sweetened coconut
Combine everything in a blender until smooth.
Pineapple Strawberry Smoothie
1 quart fresh strawberries(may also use frozen)
1 cup fresh pineapple, in chunks
2 peaches
1 cup orange pineapple juice
2 cups ice
Blend strawberries, banana and peaches in a blender until pureed. Add juice, blend. Add ice and blend until desired consistency is reached. This recipe will work for nearly any fruit. Try it with mango, raspberries, blueberries, kiwi, bananas, nectarines or even papaya. Try different juices to suit your own needs and tastes.
