Angel Peach Delight
As peach recipes go, they don't get much easier than this!
What you need:
1 prepared angel food cake
15 fresh peaches, sliced
1/4 cup peach brandy (optional)
What you do:
With serrated knife, at the top of the cake, cut 1/4 inch from each side of cake and hollow out 3 inches from the inside.
Place sliced peaches in hollowed angel food cake and sprinkle with brandy.
Garnish with peach slices and raspberies.
Baked Peaches
This peach recipe is easy to make for a summertime dessert. It will get you out of the kitchen quickly, with delicious results!
What you need:
1 dozen peaches
1 cup granulated sugar
What you do:
Prick peaches all over with a fork and set them close together in a baking dish.
Sprinkle with sugar, and add just enough water to cover the bottom of the dish.
Bake until soft.
Serve with ice cream.
Baked Stuffed Peaches
I love stuffed fruit! This stuffed peach recipe uses macaroons, which I've never seen before, but the results are fabulous!
What you need:
6 ripe peaches
1/2 cup sugar
4 egg yolks
1/2 lb. almond macaroons, crushed
What you do:
Peel and halve peaches; scoop out about 1 teaspoon of the center pulp of each half.
Mash pulp; mix with sugar, crushed macaroons and egg yolks.
Place halves close together, cut side up, in greased 8x12 baking dish.
Spoon macaroon mixture into center of each.
Bake as 300°F for 30 minutes, or until peaches are tender.
Deep Dish Peach Pie Recipe
What you need:
3 lbs. peaches
1/2 to 3/4 cup sugar and/or Splenda
8 tbsp flour (you may substitute 2 tbsp cornstarch or tapioca)
2 tbsp butter
1/2 tsp nutmeg
1/2 tsp cinnamon
What you do:
Make your favorite pie crust; or buy one ready made.
Roll out both crusts. Fit bottom crust loosely in a deep pan.
Peel and slice the peaches.
Combine sugar, spices and flour (or starch or tapioca)
Combine peaches and half of the sugar mixture.
Pour into pastry shell.
Sprinkle with spices and dot with butter.
Sprinkle the rest of the sugar/flour mixture on top.
Bake 35 to 40 minutes at 350 degrees F or until golden brown.
Frozen Peach Daiquiris
This is a peach recipe that nearly everyone will enjoy. Great served at a backyard BBQ!
What you need:
2 1/2 oz. dark rum
1/4 cup freshly squeezed lime juice
1/4 cup sugar
9 peach ice cubes (see below)
3/4 cups crushed ice
What you do:
Combine all ingredients in blender; blend smooth.
Pour into stemmed glasses.
Garnish with peach and lime slices.
Makes three 6-oz drinks.
Grilled Rum Peaches
And for dessert at your next BBQ, this wonderful peach recipe is so easy, there is almost no preparation required! Just toss the peaches on the grill before turning it off for the night
What you need:
peaches, as many as you and your guest will eat
rum
What you do:
Pit peaches
Place on grill and brush with rum
They only need a minute or two, so don't walk away while they are heating up!
Peach Cake
What you need:
7 or 8 peaches, peeled and sliced
1/2 cup sugar or Splenda
1 tsp cinnamon
1 pint sour cream(low fat, fat free or regular)
1 egg, slightly beaten
1 box yellow cake mix
3/4 stick butter or margarine
What you do:
Combine cake mix and butter with pastry blender.
Press into 9" x 13" greased cake pan.
Bake 10 minutes at 350 degrees F.
Spread peaches over baked crust.
Sprinkle with combined sugar and spice.
Combine sour cream and egg.
Drizzle over peaches (it will not cover them completetely).
Bake at 350 degrees F for 45 minutes.
Serve warm.
Refrigerate any leftovers
Peach Crisp
Crisp recipes of any kind are delicious. This peach recipe is no exception. My children love it served with real vanilla ice cream.
What you need:
6-8 peaches, peeled and sliced
2 Tablespoons lemon juice
1/2cup sifted all-purpose whole wheat or regular flour
3/4 cup rolled oats
1/2cup brown sugar, packed or 1/2 cup Splenda
1/3 cup margarine or butter
What you do:
Put peaches in a shallow 2-quart baking dish
Sprinkle with the lemon juice.
Mix flour, oats and brown sugar.
Cut in margarine with pastry blender.
Spread over the peaches and bake at 325 degrees for 30 minutes or until peaches are tender (check with a butter knife).
Serve warm with ice cream, nonfat topping, whipped cream or plain!
Peach Parfaits
What you need:
One 3 ounce package cream cheese
1-cup plain yogurt
1/4 cup sugar or Splenda (a 50/50 mix of sugar and splenda works well)
6-8 medium peaches
2 tbsp chopped almonds
What you do:
Pit and slice peaches.
Sprinkle with ½ cup sugar and refrigerate for at least an hour.
In a small mixing bowl, beat together cream cheese, yogurt and the ¼ cup sugar until smooth.
Spoon alternate layers of yogurt mixture and peaches into 6 parfait glasses.
Top with almonds.
Serve 6
Peach Pie
What you need:
Pie Filling
3 cups fresh sliced peaches
3/4 cup sugar
1/2 tsp vanilla
1/2 tsp lemon juice
1 pie shell - 9-inch, unbaked
Butter Crumb Topping
1/3 cup sugar
1/3 cup flour
1/4 cup butter
1/2 tsp cinnamon
1/2 tsp nutmeg
What you do:
Preheat oven to 400°.
Prepare pie pastry shell and set aside.
Combine sugar, vanilla, lemon juice, and fresh peaches into a medium bowl and gently mix.
Pour mixture into unbaked pie pastry.
Bake at 400° for 12 minutes.
Reduce heat to 350° and bake 30 minutes longer.
Remove from oven then increase heat to 400°.
Combine topping ingredients until crumbly; sprinkle over pie.
Continue to bake pie at 400° for 10 minutes longer or until crust turns golden brown.
Tip
Pie filling can be frozen!
Simply mix your filling as though you were making a fresh pie, then wrap your pie pan in plastic wrap and freeze your filling in the pan.
When it is frozen solid, wrap it tightly in foil.
When you're ready to bake, just make a fresh crust, place your filling inside and bake at the normal temperature.
Peach Refrigerator Cake
This is a very unusual peach recipe that I got from my great-aunt. I've never tried it, as I find marshmallows too sweet. You may enjoy it though, especially if you have a sweet-tooth!
What you need:
1/2 pound marshmallows
1/2 cup orange juice
1/2 cup ginger ale
1 cup heavy cream, whipped
Sponge cake or lady fingers
6-8 peaches, sliced
1/2 cup chopped crystallized ginger
What you do:
Cut marshmallows in quarters, add to orange juice and stir in a double boiler until almost melted;
Cool slightly and mix in ginger ale.
When slightly thickened, fold in 3/4 cup whipped cream.
Line a spring form pan with waxed paper.
Arrange layer of cake or ladyfingers on the bottom of the pan.
Layer peaches on top, then a layer of marshmallows.
Repeat until there are 3 layers of cake and 2 of the filling.
Chill in refrigerator overnight.
Unmold and garnish with remaining peaches, cream and ginger.
