Mexican Fruit Cake
What makes it a Mexican Fruit Cake? They all seem to have two things in common, pineapple and a cream cheese icing.
What you need: For the Cake: - 1 20 oz can crushed pineapple - do not drain
- 2 cups flour
- 1 cup chopped nuts
- 2 tbsp baking soda
- 2 cups sugar
- 2 eggs
For the Icing: - 6 oz cream cheese
- 1 cup powdered sugar
- 2 tbsp melted butter
- 1/2 tsp vanilla
What you do: Mix all cake ingredients together. Pour into a greased & floured 9 x 13 in. pan. Bake at 350 degrees for 30 to 35 minutes. Cool cake. Mix icing ingredients together and frost cake.
