Mexican Fruit Cake



What makes up a Mexican Fruit Cake? Two common ingredients are pineapple and a cream cheese icing.



The cream cheese gives the icing a very unique taste - great with a cup of tea or coffee!


What you need:

For the Cake:

  • 1 20 oz can crushed pineapple - do not drain
  • 2 cups flour
  • 1 cup chopped nuts
  • 2 tbsp baking soda
  • 2 cups sugar
  • 2 eggs

For the Icing:

  • 6 oz cream cheese
  • 1 cup powdered sugar
  • 2 tbsp melted butter
  • 1/2 tsp vanilla

What you do:

Mix all cake ingredients together.

Pour into a greased & floured 9 x 13 in. pan.

Bake at 350 degrees for 30 to 35 minutes.

Cool cake.

Mix icing ingredients together and frost cake.
