Mango Salsa
Two different mango salsa recipes to enjoy with chips, hamburgers, or poultry and fish dishes.
Salsa 1
What you need:
- 1 mango, peeled and diced
- 1/2 cup peeled, diced cucumber
- 1 tablespoon finely chopped jalapeno
- 1/3 cup diced red onion
- 1 tablespoon lime juice
- 1/3 cup roughly chopped cilantro leaves
- Salt and pepper
What you do:
Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well. Season with salt and pepper to taste.
Salsa 2
What you need:
- 2 cups diced mango
- 2 cups chopped tomatoes
- 1/4 cup diced red onion
- 2 tablespoons fresh basil, chopped
- 2 tablespoon fresh lime juice
- 1 tablespoon extra virgin olive oil
- salt and black pepper; to taste
What you do:
Combine all ingredients and chill. Serve with nachos, fish or chicken.
