Lemon Pudding Recipe

A homemade lemon pudding recipe is nice to make instead of using a boxed mix.



This is one of the easier lemon desserts and lemon recipes to make.

When you can make pudding at home that takes about as much time as boxed, it's nice to go with the homemade.



What you need:

2 cups milk
1 cup sugar
1/4 cup cornstarch
Pinch of salt
3 lemons
3 eggs
2 tbsp butter

What you do:

In a saucepan over medium high heat, bring milk to simmer.

Mix sugar, cornstarch and salt in a bowl.

Grate lemons. Add 2 tsp zest to bowl.

Add eggs and whisk everything together.

Pour heated milk into bowl continuing to whisk.

Put in saucepan and heat until mixture gets thick, stirring continuously.

Remove from heat. Whisk in butter until melted and mixture is smooth.

Squeeze lemons into mixture and whisk.

Pour into bowl and refrigerate 2 hours before serving.
