Grilled Fruit Recipes
Grilled fruit recipes will add some colour and unique flavour to your next backyard BBQ. Go ahead, impress your friends and family!
Grilled Fruit Kebabs What you need: - 2 tbsp vegetable oil
- 2 tbsp brown sugar
- 2 tbsp fresh lime juice
- 1 tsp ground cinnamon
- 1/4 cup fresh mint, chopped
- 2 apples, cored and cut into 1" pieces
- 2 bananas, peeled and cut into 1" pieces
- 2 peaches, pitted and cut into 1" pieces
- 4 kiwis, peeled and sliced into 1" thick sections
- 4 1" slices fresh pineapple, peeled, cored and cut into 1" pieces (or 1 can pineapple chunks)
- 16 strawberries, washed and hulled
What you do: Preheat the grill. In a small bowl, combine oil, sugar, lime juice, cinnamon and mint; mix until sugar is dissolved. If you are using wooden skewers, soak them in water for about 10 minutes to prevent them from burning. Alternate fruit pieces and thread onto skewers. Brush kebabs with the sugar mixture and place on the grill. Grill kebabs for about 6-8 minutes, turning frequently until fruit starts to brown and is heated through.
Grilled Fruit Pizza What you need: - Homemade or ready-made pizza dough (NOT crust!) split into 6 sections and formed into disks
- 1 pint fresh strawberries
- 1 pineapple, cleaned
- 2 kiwi fruits peeled
- 1 jar (14-oz. size) strawberry preserves
- 1 package (16-oz. size) chocolate or white chocolate morsels
What you do: Cut fruit into pieces large enough so that they won't fall through the bars of the grill; or place a piece of aluminum foil over grill. Spray the fruit lightly with cooking spray or EVOO. Grill fruit until grill marks appear. Set fruit aside and prepare pizza crust for the grill. Spray the disks of pizza dough with cooking spray or olive oil and place on the grill. Cook dough for 3-5 minutes. Flip over, and spread with strawberry jam. Add chocolate chunks and grilled fruit. Continue to grill until chocolate melts and pizza is heated through, about 4-5 minutes. Serve immediately. Makes enough for about 12 people; 1/2 a pizza each.
Grilled Fruit with Dip and Glaze What you need: - 4 oz. cream cheese
- 1 tbsp honey
- 1 sliced red pear
- 1 sliced red apple
- 1/2 sliced cantaloupe
- 2 sliced bananas
- 1/4 cup melted butter
- 1 tbsp honey
What you do: Dip In a small bowl, combine softened cream cheese and honey. Set aside. GlazeIn a small bowl, combine melted butter and honey. Set aside. Slice pear, apple, cantaloupe and bananas into large pieces. In a large bowl, combine fruit and desired amount of glaze. Toss gently. Place fruit slices onto a medium grill, and grill fruit until grill marks appear, about one minute. Remove from grill and place on a serving platter. Serve with cream cheese dip. Makes 4 servings
Grilled Honey & Balsamic Fruit Salad What you need: - ½ cup liquid honey
- 1 tbsp balsamic vinegar
- 2 tsp finely chopped fresh mint
- 4 peaches
- 4 red plums
- 1 tbsp melted butter
- 2 cups halved green grapes
- ¼ to ½ cup crumbled feta cheese
- Mint leaves, as garnish
What you do: Stir honey and balsamic vinegar together. Add chopped mint and set aside. Preheat an indoor or outdoor grill to medium-high heat. Bring a pot of water to a boil. Using a sharp knife, cut a small X in the bottom of each peach. Gently drop peaches into the boiling water. When the X begins to peel away, remove the peaches and plunge immediately into cold water. Use your hands and a paring knife to remove the peach skins. Pat dry and quarter, removing the pit in the process. Place in a bowl. Quarter plums, removing pits and add to bowl with the peaches. Add butter and toss until evenly coated. Place prepared fruit on grill, cut sides down. Brush all over with honey mixture. Cook, turning and basting often, for 3 to 4 minutes or until well marked. Transfer back to bowl. Drizzle any leftover honey mixture from the bowl onto fruit, add grapes and toss to combine. Just before serving, sprinkle with cheese and mint. Makes 6 servings.
Grilled Watermelon Salad What you need: - 6 slices seedless watermelon
- 1 tsp kosher salt
- 6 cups romaine or bibb lettuce (cut into bite-sized pieces)
- 1 cup fresh mint, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup freshly-squeezed lemon juice
What you do: Prepare grill or heat a cast iron grill pan over medium heat. Sprinkle salt over watermelon slices. Place watermelon on grill in a single layer (you may have to do this in batches). Cook 2 minutes, then flip and cook another 2 minutes. Remove and place on a cutting board. Allow watermelon to cool for 5 minutes. Cut into bite-sized pieces and set aside. Place the lettuce in the bottom of a large salad bowl. Top with watermelon pieces, mint, and feta. Pour the lemon juice over the salad and lightly toss. Serve immediately. Makes 4 to 6 servings.
