The earliest recipes date back to ancient Rome, when raisins, pine nuts and pomegranate seeds were mixed into barley mash. Doesn't sound so appealing now, but back then would have been a real treat; one to be enjoyed by the wealthy portion of the poulation.
By the 16th century, it became more affordable, with sugar being available from the American Colonies. It was now that the discovery was made that high concentrations of sugar could preserve fruit. With an abundance of it produced, candied fruit was added, and our modern-day fruit cake recipe was born! Nuts were added starting sometime in the 18th century.
