Fruit Cake Recipe

A basic fruit cake recipe for the holiday season. Enjoy with your favorite friends and beverage!



Careful! This recipe contains a large quantity of chopped pecans. If you don't like them, this recipe isn't for you.

What you need:

  • 5 eggs
  • 1/2 lb. butter
  • 1 cup sugar
  • 1 3/4 cups flour
  • 1/2 tsp baking powder
  • 1 lb. candied cherries
  • 1 lb. candied pineapple
  • 4 cups chopped pecans
  • 1 tbsp vanilla
  • 1 tbsp lemon extract

What you do:

Cut cherries into quarters; cut pineapple into chunks. Cream butter and add sugar slowly.

Beat eggs and add to butter/sugar mixture. Add flavorings next.

Sift flour and measure. Sift again with baking powder.

Place cut up fruit into flour mixture and stir fruit to coat.

After coating fruit, gradually add fruit/flour mixture to sugar mixture until all is combined.

Pour batter into 2 greased and floured loaf pans.

Put fruit cake into a cold oven and set to 250 F. Bake 2 to 2 1/2 hours.

Makes 2 loaves.
