Fresh Fruit Salad

This fresh fruit salad recipe requires a bit of planning- the dressing needs about half-an-hour to cool, plus the time it takes to cook.


What you need:

  • 1 egg, well beaten
  • 1/4 cup honey
  • 1 tbsp lime juice (fresh if available)
  • 1/2 cup heavy cream, whipped
  • 8 cups cut-up fresh fruit, such as: strawberries, grapes, bananas, apples, oranges, cantaloupe
  • 1/2 cup peanuts, coarsely chopped
  • Salad greens

What you do:

Combine egg, honey, and lime juice in a saucepan and cook over medium heat, stirring constantly until thickened.

Remove from heat; cool for 30 minutes.

Fold in whipped cream; chill until ready to serve.

Just before serving, blend in fruit and peanuts. Arrange on salad greens, and garnish with egg-honey dressing.

Instead of serving on salad greens, scooped-out melon halves could also be used. Very pretty.
