Fig Biscotti





Fig Biscotti

Having some friends over? This is a biscotti recipe perfect for entertaining.

What you need:

  • 1 1/2 cups flour; sifted
  • 1/2 tsp baking powder
  • 2 tbsp cocoa powder
  • 2/3 cup superfine sugar
  • 3 eggs, lightly beaten
  • 1 cup dark chocolate, chopped
  • 1/2 cup of dried figs, chopped

What you do:

Preheat oven to 375°F.

Combine the flour in a large bowl with baking powder, cocoa powder and sugar.

In a seperate bowl, combine eggs, chocolate and figs.

Gradually add the egg/chocolate mixture to flour mixture, stirring to form a stiff dough.

Transfer the dough to a work surface that has been lightly dusted with flour.

Knead until smooth.

Divide dough into two pieces and shape into two long logs.

Place logs on a baking tray lined with non-stick baking paper and press along top of log to slightly flatten.

Bake for 20 minutes.

Remove from oven and allow to cool for 15 minutes.

Reduce the oven temperature to 300°F.

Cut logs into half-inch thick pieces.

Bake for an additional 10 minutes, or until hard.

Allow to cool on a wire rack.

Serve with your favorite cup of coffee or other beverage.
