Lemon Creme Brulee Recipe
A lemon creme brulee recipe can be enjoyed for any occasion all year long.
It's one of the tasty lemon desserts you can make at home anytime.
What you need:8 egg yolks 2/3 cup sugar 1/2 cup sugar 3 lemons 2 2/3 cups heavy cream 1 tbsp vanilla extract
What you do: Preheat oven to 300 degrees F. In mixing bowl, mix egg yolks and 2/3 cup sugar. Grate 1 tbsp lemon zest and add to yolk mixture. In a saucepan, add cream and on high heat bring to a slight boil. Pour the cream over the yolk mixture - whisk lightly. Do not create a lot of foam. Squeeze lemons for 1/3 cup of juice, stir lemon juice and vanilla into yolk mixture. Using 6 oz ramekins , (about 6), pour the mixture into each one with an even amount in each dish. Ramekins should be set in a shallow baking dish. Boil water, then pour boiling water into the dish, enough to cover half way up the ramekins. Cover the dish with foil. Bake 25 - 30 minutes until set in the middle. Cool. When cool, refrigerate for 2 - 3 hours. Before serving, you can sprinkle the 1/2 cup of sugar on top of each custard. If you wish to caramelize, place them under the broiler. The flame should be two or three inches away from the top of the ramekins. Put the ramekins back in the baking dish to caramelize. Put ice and water around each ramekin (this keeps the creme brulee cold and creamy.) Keep an eye on these as the sugar should melt within 2 - 4 minutes. When it does, remove from oven.
For one of the tasty raspberry recipes, this can be made with fresh raspberries.Follow the recipe above, but don't use lemons or vanilla extract. Instead use: 1 cup of raspberries 1/4 cup framboise
After you preheat the oven to 300 degrees F, in a bowl you mix the egg yolks, 2/3 cup sugar, raspberries and framboise. Then follow the above recipe.
