Baked Cherries
This cherry recipe is easy to prepare, and delicious to eat!
What you need:
3 cups sweet cherries
1 1/4 cups milk
4 eggs
1/2 cup sugar
1 teaspoon salt
1 1/2 tablespoon butter, melted
1 cup flour
1/4 cup confectioner's sugar
What you do:
Preheat oven to 350°F.
Wash cherries; remove stems and pits.
Place pitted cherries in an 8 cup oven-proof dish.
In the bowl of a food processor or blender, combine milk, eggs, sugar, salt, and melted butter.
Blend until smooth.
Add flour and blend briefly - do not over mix once flour is added.
Pour batter into baking dish, covering cherries, and bake for 30 minutes or until top is light golden brown and center is done.
Sift confectioner's sugar over the top and serve while still warm.
*This dessert can also be prepared using blueberries, plums, peaches, apples or any other fruit that is in season.
Top with whipped cream or scoops of vanilla ice cream, if desired.
Cherry Cobbler
One of our favorite cherry recipes!
What you need:
Cherry mixture:
3 cups tart cherries
2/3 cup sugar
1 cup cherry juice (or water)
1 tbsp tapioca (or cornstarch)
1/2 tbsp butter
1/2 tsp. cinnamon
Dough:
1 3/4 cup flour
2 1/2 tsp baking powder
1 1/4 tsp salt
1 tbsp sugar
1/4 cup butter
3/4 cup milk or cream
What you do:
Filling:
Thicken fruit mixture by combining sugar and tapioca in saucepan.
Stir in cherries, juice and cinnamon.
Cook, stirring constantly, until mixture is thickened and bubbly.
Dough:
Sift flour, baking powder, salt and sugar togetherCut in butter with a pastry blender until mixture is crumblyAdd milk, stir lightly
Pour hot cherry mixture into a buttered 6 cup shallow baking dish or pan.Dot with butter.Spoon dough over hot cherries in evenly spaced mounds.Sprinkle top with trace of sugar.Bake at 400 degrees for 25 minutes or until top is brown.
Serve with heavy cream or yogurt.
Cherry Crisp
What you need:
4 cups pitted sour cherries (fresh, frozen or canned)
1 1/2 cups white sugar
4 tablespoons all-purpose flour
1 1/2 cups all-purpose flour
1 cup old-fashioned oats
1 cup brown sugar
1/2 cup butter
1/2 cup shortening
What you do:
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine cherries, 1 1/2 cups white sugar, and 4 tablespoons flour.
Pour into 9x13 inch baking dish.
In a medium bowl, combine 1 1/2 cups flour, oats, and brown sugar.
Cut in butter and shortening until crumbly.
Sprinkle over cherries.
Bake in preheated oven for 45 to 50 minutes, or until topping is golden brown.
Note: If the cherries are sweet, cut the sugar to 2/3 cup.
Cherry Liqueur
A cherry recipe that you are sure to love!
What you need:
1 1/2 lbs red cherries, with pits,no stems
1 1/2-2 cups sugar, sweeten to taste
2 1/2 cups vodka
1 cup brandy
What you do:
Mix vodka, brandy and sugar in a large glass measure or medium mixing bowl; stir well to dissolve.
Cut each washed cherry slightly to open, leave in pits.
Place cherries in two sterile, quart wide mouth jars or one larger aging container.
Pour liquid mixture over cherries; stir and cap with tight lids.
For the first two weeks, shake jars several times.
Let age in a cool, dark place for at least 3 months for best flavor.
Strain off liqueur through a wire mesh strainer and discard cherries.
Rebottle as desired.
Liqueur is ready in 3 months.
Sugarless Cherry Liqueur
Substitute 1 cup apple juice concentrate, undiluted, for the sugar in the Cherry Liqueur recipe.
* Proceed as directed in cherry liqueur recipe above.
Cherry Muffins
What you need:
1/2 teaspoon salt
1 tablespoon baking powder
2 cups all-purpose flour
1/4 cup sugar
1 cup pitted fresh cherries or canned cherries, drained
1 egg
3/4 cup milk
1/4 cup melted butter
What you do:
Sift together flour, salt, baking powder and sugar.
Add cherries and stir gently to blend.
In a separate bowl, beat egg until thick and light in color; stir in the milk and melted butter.
Quickly stir egg and milk mixture into the dry mixture.
Butter and flour 12 muffin cups.
Pour batter into prepared muffin tins.
Bake cherry muffins at 375° for 25 to 30 minutes.
Makes 12 cherry muffins.
Cherry Pie
Another favorite cherry recipe!
What you need:
4 cups tart cherries
1 cup sugar
Dash salt
3 tbsp corn starch
3/4 cup cherry juice
1/4 tsp. lemon or almond extract
1/4 tsp red food coloring (optional)
2 tbsp. butter
Crust for two crust pie
What you do:
Mix 1/4 cup sugar, salt and corn starch.
Add 1/4 cup cherry juice to make a paste.
In a saucepan, mix 3/4 cup sugar and 1/2 cup cherry juice and bring to a boil.
While boiling, slowly add corn starch mixture.
Stir constantly, and cook until thick and clear.
Fold in the cherries and add lemon or almond extract, food coloring (if using) and butter.
Pour into pie crust, cover with top crust and bake at 375 degrees for one hour.
