Blueberry Soup
If you're looking for new fruit soup recipes, blueberry soup is fairly easy to make.
Each serving packs a nice amount of antioxidants. Top it with a bit of vanilla yogurt and it's a nice calcium boost as well.
It's a nice hot summer day blueberry dessert and an easy blueberry recipe to prepare.

What you need:2 pints blueberries 3/4 cup sugar 1/2 cup apple juice 1/4 cup lemon juice 1/2 cup vanilla yogurt 1 tsp ground cardamon
What you do: Put blueberries, apple juice, sugar, lemon juice and cardamon in blender or food processor and puree. Strain mixture. Chill. Pour into soup bowls and top with a scoop of vanilla yogurt.
