Blueberry Muffin Recipes
Yummy blueberry muffin recipes are filled with one of the most antioxidant fruits - blueberries and make a nice breakfast item or mid morning snack at work.
Enjoy a hot muffin with your favorite beverage any time of the day or night.
Muffins are one of our favorite blueberry recipes.
What you need:
- 2 cups flour
- 3/4 cup sugar
- 1/3 cup oil
- 2 eggs
- 2 tsp. baking powder
- 1/2 cup milk
- 2 cups blueberries
What you do:
Mix all ingredients except the blueberries until mixture is moist.
Add blueberries and gently mix in.
Pour mixture into greased muffin tins - or fill with baking papers. Bake at 375 degrees F about 25 minutes.
Touch and see if muffin springs back. If it does, they're ready to come out of the oven.
Cool on rack.
Makes 12 muffins.
