Blackberry Muffins
Blackberry muffins are a nice change if you want something other than blueberry muffins.
The blackberries give the muffin a heartier taste than blueberries and still contain vitamins.
They're tasty right from the oven when they're warm. Savor one with your favorite cup of coffee or tea.
What you need:
- 1/2 cup shortening
- 1 1/4 cups sugar
- 2 eggs
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 cups fresh blackberries
What you do:
Cream shortening and sugar.
Add eggs one at a time and blend.
Add dry ingredients alternately with milk.
Fold in berries.
Bake at 350 F for 25 to 30 minutes.
Makes 18 muffins.
