Banana Sushi

This banana sushi recipe is quick to prepare, and one that the kids can help make. Plan on at least doubling the recipe- kids just love it. I generally use one banana each, and my boys still ask for more! Guess I'll have to make triple from now on :)

What you need:

  • 1 ripe banana
  • 2 pieces of bread, whole grain for most nutritional impact
  • Peanut butter, OR almond butter, OR chocolate hazelnut spread, OR any other spread you have on hand. You need something to make it stick together.

* The chocolate hazelnut spread is our favorite (also called Nutella)

What you do:

  • Cut the crusts off of the bread. Save for another use (croutons, maybe?)
  • Lay the bread on a cutting board, with one piece overlapping the other slightly
  • With a rolling pin, wine bottle or anything else you can find to roll with, flatten the bread, pressing along the seam to seal the two bread pieces together
  • Spread the peanut butter (or what you have chosen) onto both pieces of bread
  • Place a banana at a long edge of the bread, and roll the bread up around it, bringing the long edges together and pressing slightly to seal
  • Slice into 6 pieces and enjoy!
