Banana Nut Muffins




These yummy banana nut muffins are perfect on a cool morning for breakfast.

They're one of the scrumptious banana recipes and molasses recipes that smell good baking and taste great eating.



What you need:
  • 3 or 4 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 1 egg, beaten
  • 1 tbsp molasses
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cup of flour (you can use whole wheat flour)
  • 1 cup chopped pecans or walnuts

What you do:

Preheat oven to 350°F. With a wooden spoon, mix butter and mashed bananas in a large mixing bowl.

Mix in sugar, egg, molasses and vanilla.

Sprinkle baking soda and salt over the mixture and mix.

Add flour, mix until it blends in. Fold in the chopped pecans or walnuts.

Pour mixture into prepared muffin tin. Bake for 25 - 30 minutes.

Stick a toothpick into the center of a muffin. If it comes out clean, they're done.

Cool on a rack.

Makes 12 muffins.
