Banana Muffins
These tasty banana muffins are one of the favorite banana recipes and a yummy apple sauce recipe.
Try one for breakfast warm from the oven, as a pick me up at the office, or an after dinner delight.
What you need:
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- 1/3 cup applesauce
- pinch of cinnamon
- splash of vanilla
What you do:
Preheat oven to 350 F degrees. Line muffin pans with papers or use non-stick spray.
Sift flour, baking powder, baking soda, and salt - put aside.
Combine bananas, sugar, egg, vanilla, cinnamon and applesauce in bowl. Fold in flour mixture, mix until smooth.
Pour into muffin tins. Bake about 25 to 30 minutes. Lightly touch muffins, they will spring back if done.
Wait 3 - 5 minutes, then transfer to a wire rack to finish cooling.
