Baked Fruit Compote

This baked fruit compote recipe is baked using fresh apricots, peaches, and plums. Coconut and brown sugar add additional flavour.

What you need:

  • 2 cups fresh chopped apricot halves OR 1 can (about 16 ounces)
  • 2 cups chopped fresh peaches OR 1 can (about 16 ounces)
  • 2 cups chopped fresh plums OR 1 can (about 16 ounces)
  • Zest of 1 orange
  • 1/2 cup orange juice
  • 1/4 cup brown sugar
  • 2 tablespoons melted butter
  • 1/2 cup flaked coconut

What you do:

  • Drain any canned fruit that you are using thoroughly; mix in orange zest.
  • Arrange fruit in a lightly buttered baking dish.
  • In a bowl, combine the orange juice and sugar; pour over fruit.
  • Drizzle the melted butter over fruit then sprinkle coconut over everything
  • Bake at 400° for 15 to 20 minutes, until hot and bubbly. Serve warm.

Makes enough for about 8 people.
